At 14, I started collecting my favorite recipes in an old agenda my father had given me. The 3rd recipe in my recipe inventory was chocolate mousse. Chocolate mousse is, without question, my unmitigated favourite pudding to make for kin and friends. What is not to love about it? It adds class to any event, desires no cooking, aside from liquefying the dark chocolate, and most vitally, everybody adores it!
Since starting that recipe collection so long back, I have experimented with many different ways to make chocolate mousse. When I discovered Pierre Herm's chocolate mousse lately, I adopted it straight away and forgot my prior recipes. Pierre Herm is a famous French pastry cook known by some as "the Picasso of pastry." What makes his chocolate mousse recipe amazing is its light texture and lower calories. Most recipes use heavy cream or butter. It is so simple to make and can be prepared up to 2 days ahead.
It keeps very well in the fridge. All you do is chop and melt the chocolate, mix it with boiled milk and egg yolk. Whip egg whites until they reach a light texture. Add sugar in a nice and steady stream until the egg whites are firm and glossy. Add third of the egg whites at a time, whisking the mixture to a light texture. Rigorously fold in the leftover whipped whites of the eggs. Decant into a massive bowl or into little individual serving bowls. Let the mousse chill for roughly 2 hours and then serve with any toppings you like!
As the recipe only has 1 or 2 ingredients, you can truly splash out and buy a quality chocolate. There are many types of chocolate available to use at the superstore, like Ghirardelli and Lindt, or you can get truly fancy and head to your closest chocolatier. The most straightforward choice is to utilise Ghirardelli cacao bitter-sweet chocolate. It is extremely tender, both by itself and in this mousse.
