MIDI stands for Musical Instrument Digital Interface; the MIDI keyboard is a device that sends information about your playing to MIDI software on a computer. This playing can be recorded onto tracks that can be made to sound like any number of different instruments from pianos to electronic drum kit and many more.
The MIDI tracks can then be edited any number of times which saves having to play retakes if something doesn’t sound quite right. Some musicians use the MIDI keyboard and computer software to set up and play the sound of many instruments just like you would hear if an orchestra were playing. This gives their playing or their band a great deal of flexibility as they do not need to hire musicians to play that accompanying music.
You could set it up to play the same sounds as a drum kit, bass, various keyboards or even strings or any number of other instruments. The software to play and record this music is called a MIDI sequencer and these MIDI sequenced tracks are often used by cover duos who use the music as backing tracks eliminating the need for backing musicians like a bass player and a drummer.
Some MIDI keyboards have some sounds built into the keyboard itself while other more basic keyboards without any onboard sounds are called MIDI controllers and rely on the MIDI software on the computer or a separate unit called a MIDI sound module to produce the actual sounds.
